  • 1-2 tomatoes
  • 4 oz. mozzarella cheese
  • 4 leaves basil, chopped
  • salt and pepper, to taste
This favorite Italian salad is the classic combination of mozzarella, tomatoes and herbs at its most basic.
Use mozzarella cheese in its natural form: Mozzarella comes in ball shapes stored in oil or water. It’s not meant to be used dried out and shredded, as it is found most commonly in the United States. That robs it of its flavor and texture.
Chop tomatoes into sections or slice. Cut or slice mozzarella into bite-sized sections. Arrange or mix with tomato pieces and sprinkle with freshly chopped basil. Voila! Aromatic and delicious.
Variation: Lay tomato slices on a slice of Italian bread and top with mozzarella cheese and basil. Broil until cheese is melted and brown and bread is crispy.
