Squash Pie
Contributed by:
  • 2 cups squash (with skin and seeds)
  • 2 cups sugar
  • 1 stick margarine
  • 4 eggs
  • 2 tsp. flour
  • 1 tsp. lemon extract
  • 1 tsp. coconut extract
  • 2 9-inch pie crusts, uncooked
Preheat oven to 350 degrees. Cook, drain and mash squash. Mix all ingredients in blender until smooth. Pour into two 9-inch frozen pie crusts. Bake for 35-50 minutes.
