BUTTERMILK COCONUT PIE

Ingredients:
  • 1 stick butter
  • 3â�„4 cup buttermilk
  • 5 eggs
  • 2 cups sugar
  • 1 tsp. vanilla
  • 2 cups coconut
  • 2 unbaked pie crusts
Preheat oven to 350 degrees. Melt butter and add buttermilk. In a separate bowl, beat eggs, beat in sugar. Pour butter mixture and egg mixture together. Add vanilla and coconut and mix well. Pour into unbaked pie crusts and bake for 45 minutes.
Makes two pies.
