  • 6 slices bacon
  • 1 stick butter
  • 3 TBS flour
  • 4 cups milk
  • 5 large potatoes, cubed
  • 1 small onion, chopped
  • 4 green onions, chopped
  • shredded cheese
  • salt
  • pepper
In a skillet, cook bacon over medium heat until browned; drain, crumble and set aside.
Melt butter in a pot over medium heat. Add flour, whisking constantly to a smooth consistency. Add milk gradually until thickened; stir in potatoes, onion, salt and pepper. Bring to a boil stirring frequently. Reduce head and simmer until potatoes are tender. Pour into bowls and top with bacon, cheese and green onions.
