  • 6 pounds tart red apples
  • 5 TBS sugar
  • 2 TBS fresh lemon juice
Peel and core apples and coarsely chop. Combine the apples, sugar, and lemon juice in a large saucepan. Add 1/2 cup water. Bring to a boil, then lower heat, cover and simmer until apples are tender. Uncover, and continue to cook until most of the liquid is gone. Remove from the heat and press through a colander.
