20-oz. can crushed pineapple
6-oz. packet apricot gelatin mix
2 cups buttermilk
8 oz. whipped topping
Bring pineapple in its juice to a boil. Add gelatin and stir until dissolved. Chill until almost set.
Add buttermilk and chill again.
Fold in whipped topping (and add nuts if desired). Put into a 13- by 9-inch pan. Chill until set.
