Vegetables & Side Dishes

  • 3-4 zucchini, sliced
  • 2 medium potatoes, sliced
  • 1 medium onion, sliced
  • 2 medium tomatoes, diced
  • 1 can cream of celery soup
  • Salt and pepper to taste
  • Parmesan cheese, shredded
Cook the potatoes and zucchini for about 5 minutes on the stovetop. Place zucchini on the bottom of a square casserole dish. Layer the vegetables in the following order: potatoes, onion and tomatoes. Cover with the soup, salt, pepper and cheese. Bake at 350 degrees for 20 minutes, then add more cheese and bake for 10 minutes more.
