SKILLET SMOTHERED CHICKEN
2 TBS olive oil
2 garlic cloves, pressed
4 large boneless, skinless chicken breasts
1 cup barbecue sauce
4 scallions, tops included, chopped
4 slices cooked turkey bacon, crumbled
4 Roma tomatoes, diced
4 slices mozzarella or provalone cheese or low-fat slices
In large skillet, cook garlic in oil on medium-high heat for about one minute. Place chicken into hot oil and sear on both sides, 2-3 minutes on each side. Place lid on skillet and drop heat to medium to cook chicken thoroughly (about 5 minutes).
Reduce heat to simmer and coat the chicken with barbecue sauce. Top with scallions, bacon and tomatoes, then cover each chicken breast with a slice of cheese (which will hold the topping in place as it melts).
