THAI BARBECUE CHICKEN

Ingredients:
  • 4 lbs. chicken (breasts, thighs, wings or legs)
  • 1 ginger root
  • 1 garlic bulb
  • Salt
  • Cracked pepper
  • 2 TBS sesame oil
  • 1 cup soy sauce
Preheat oven to 400 degrees.
Chop about three tablespoons ginger and the garlic bulb. Rinse the chicken thoroughly and place in a deep baking dish or roasting pan.
Add a dash of salt and cracked pepper to chicken. Sprinkle enough ginger and garlic over chicken to cover it lightly. Lightly drizzle about one tablespoon sesame oil over chicken and pour in half a cup of the soy sauce. Turn chicken over and repeat. Rub the mixture into the chicken.
Cover and refrigerate at least one hour or overnight. Bake for 40 minutes, turning chicken half-way through.
