Fresh Apple Cake

  • 3 cups diced apples
  • 1 cup vegetable oil
  • 2 cups sugar
  • 21â�„2 cups flour
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 11â�„2 tsp. baking soda
  • 1â�„2 tsp. cloves
  • 1â�„2 tsp. cinnamon
  • 1â�„2 tsp. nutmeg
  • 1 cup chopped nuts
  • 1â�„2 cup raisins
Placed diced apples in mixing bowl. Pour oil and sugar over apples and mix. Add eggs and vanilla. Stir.
Sift all dry ingredients together and stir into apple mixture. Pour into a 9- by 13-inch or 10- by 14-inch cake pan.
Bake at 350 degrees for 35-45 minutes. May bake in a tube pan at 350 degrees for one hour (check with toothpick for doneness).
