SWEET POTATO CASSEROLE
Vegetables & Side Dishes

Ingredients:
  • 3 cups sweet potatoes, mashed
  • 11â�„2 cups sugar
  • 1â�„2 tsp. salt
  • 1 stick margarine
  • 1â�„2 cup evaporated milk
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 cup crushed pineapple
Mix potatoes, sugar, salt and margarine. Add milk, eggs, vanilla and pineapple. Mix all together and pour into casserole dish. Bake at 325 degrees until brown and bubbly.
May top with marshmallows, if desired, before baking.
