  • 2 cups cooked, mashed sweet potatoes
  • 1 can evaporated milk
  • 1 cup brown sugar
  • 1â�„2 cup light corn syrup
  • 1â�„4 cup white sugar
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 1 TBS melted butter
  • 3 eggs, separated
  • 3 unbaked pie crusts
Put sweet potato into mixing bowl and mix in other ingredients, except eggs. Separate eggs and beat into sweet potato mixture. In a separate bowl, beat egg whites until stiff, then mix into sweet potato mixture. Pour mixture into pie shells. Bake 45-50 minutes or until brown.
