PHYLLO-APPLE STREUSEL PIES

  • For filling:
  • 3 medium or large Gala apples
  • 2 TBS butter
  • 1â�„3 cup sour cream
  • 1â�„4 cup orange juice
  • 1â�„3 cup sugar
  • 2 TBS brown sugar
  • 1 tsp. vanilla
  • 3â�„4 tsp. cinnamon
  • 1 TBS cornstarch
  • 2 TBS water
  • 1 roll phyllo dough
  • optional: honey or melted butter
  • For streusel:
  • 1 cup flour
  • 1â�„4 cup sugar
  • 1â�„2 cup brown sugar
  • 1â�„2 tsp. cinnamon
  • 1â�„4 tsp. salt
  • 1 stick cold butter
Preheat oven to 350 degrees.
Make filling: Slice apples. Slightly brown butter in a sauté pan over medium heat and stir in apples, coating with butter. In a bowl, combine sour cream, orange juice, both types of sugar, vanilla and cinnamon, mixing well. Pour into the apples. In another bowl, mix the cornstarch and water. Slowly stir the cornstarch mixture into the apple mixture. Cook until thickened.
Unroll and flatten phyllo dough. (It will be several layers thick. Keep the layers together.) Cut the dough into six even sections. Form each section (with layers) of phyllo dough into muffin tins, brushing with honey or melted butter as desired.
Make streusel: Mix the flour, sugar, brown sugar, cinnamon and salt together. Dice butter into one-inch cubes and slowly cut into the dry mixture. Do not overmix.
Divide the apple filling evenly among the six cups and top with streusel mixture. Bake for 20-30 minutes or until golden brown.
