LAYER CHOCOLATE CAKE OR SOUR CREAM POUND CAKE

Ingredients:
For cake:
2 sticks butter, softened
2 TBS shortening
3 cups sugar
5 eggs
4 cups flour
1 tsp. baking powder
1�2 tsp. baking soda
1�4 tsp. salt
2�3 cup buttermilk
1 cup sour cream
1 TBS rum flavoring
1 TBS lemon flavoring
1 tsp. vanilla flavoring
1�4 tsp. yellow food coloring
For icing:
1�2 stick butter or margarine, room temperature
1 box confectioners sugar
2 TBS cocoa
4 TBS sweet milk
1 tsp. vanilla flavoring
For cake:
Preheat oven to 325 degrees and grease and flour three 9-inch cake pans.
Cream butter, shortening and sugar. Add eggs one at a time and mix well.
In a large bowl, sift together the flour, baking powder, baking soda and salt; add to butter mixture. Beat about two minutes then add the buttermilk and sour cream and blend well. Add the lemon, rum and vanilla flavorings and the food coloring and beat two more minutes.
Spoon batter evenly into the prepared pans and bake for 35-40 minutes. Let cool, then frost with chocolate icing.
For a pound cake, spoon the batter into a greased and floured tube pan and bake for 45 minutes.
For icing:
Beat butter, sugar, cocoa and milk until the frosting is of spreading consistency. Mix in the vanilla flavoring. Spread between layers and on top and sides of layer cake.
