Guinness Steak with Smashed Irish Potatoes

Ingredients:
  • 4 (1-to-2 inch) Rib Eye Steaks, salted and peppered
  • 1 TBS extra virgin olive oil
  • 4 TBS butter, divided
  • 2 shallots, chopped
  • 2 cups sliced mushrooms
  • 1 cup Guinness Stout
  • 2 TBS chopped fresh parsley
  • 8 small potatoes (or 4 larger potatoes, halved), washed and parboiled in salted water for 12-15 minutes, or just until beginning to get tender, drain and then return to hot pot to dry
Add olive oil and one tablespoon of butter to large skillet over medium high heat. When melted and sizzling, add steaks and sear for about 2 minutes each side. Remove steaks, place on sheet pan in preheated 400° oven (6-8 minutes for medium rare).
Reduce heat to medium under iron skillet, and add mushrooms and shallots. Sauté until mushrooms are lightly browned on each side. Add Guinness, stir to deglaze pan, and reduce heat to simmer. Cook until liquid is reduced to half. Remove steaks from oven and add to pan (along with any accumulated juice) with mushrooms, spooning mushrooms over steak.
Meanwhile, add remaining butter to separate medium sized pan over medium heat.
Give the parboiled potatoes a little smash with a rolling pin, and add them to the melted butter. Salt and pepper to taste. Cover and cook for about 5 minutes, turn potatoes, add parsley, cover and cook another 5 minutes, or until potatoes are browned and tender.
Serve Guinness Steaks and mushrooms with Smashed Irish Potatoes.
