  • 2 lbs. confectioners sugar
  • 3 sticks butter
  • 1 tsp. vanilla
  • 1 cup peanut butter
Mix the first three ingredients together until the mixture forms a dough that can be rolled out. If it feels dry and brittle, add a teaspoon of butter and mix it in.
On a surface sprinkled with confectioners sugar, roll out the dough to 1/4-inch thickness. Spread peanut butter on the dough and begin rolling the dough up until it forms a log. Chill for 30 minutes, then slice to desired thickness. For a chocolate version, melt 2 cups chocolate chips and 1/2 bar (2 oz.) wax in a double boiler and mix. Dip pinwheels in chocolate then place on waxed paper to set.
