  • 2 cups grated raw yellow squash
  • 2 eggs
  • 6 TBS self-rising flour
  • 2 TBS sugar
  • 2 TBS butter, softened
  • 1â�„4 cup minced onion
  • Salt and pepper
  • Cooking oil
Mix all ingredients until blended. Shape into patties. Fry in a small amount of hot oil until brown on both sides.
Fresh uncooked squash can be grated and frozen for use year-round.
