CHESS CAKE

Ingredients:
  • 1 box yellow cake mix
  • 1 stick margarine or butter, melted
  • 3 eggs
  • 8 oz. cream cheese
  • 1 box confectioners’ sugar
  • 1 tsp. vanilla or lemon extract
Preheat oven to 325 degrees.
Combine the cake mix, margarine and one egg; mix well. Batter will be stiff. Press into a 9-by-13-inch baking pan sprayed with non-stick cooking spray. Mix the cream cheese, sugar, remaining two eggs and flavoring; beat well. Spoon cream cheese mixture over the cake batter and bake 45-50 minutes or until lightly brown on top. Cool and cut into squares.
Different flavors can be achieved by using German chocolate or lemon cake mix instead of yellow cake mix and leaving out flavoring.
